How do you create user stories and tasks in Jira?

We are use Jira/GreenHopper to run our runs on a Scrum group. The way that Jira is a bug following device and GreenHopper is a Scrum-ish add-on is ending up horrendously clear.

We need our Product Owner to enter client stories in Jira/GreenHopper and have the group hang specialized undertakings onto the client stories. How can one do this? Jira/GreenHopper does not appear to have any idea of client stories with errands. Is this right or am I missing something?

Likewise, we need the assignment board in Jira/GreenHopper to track the client stories and undertakings as they move from To Do to Done. Once more, there is by all accounts no real way to do this. A User Story is Done when the majority of its errands are finished. Errands ought to have the capacity to move from To Do to Done while the User Story is In Progress. It is safe to say that we are right in suspecting that the Jira/GreenHopper errand board can't do this?
